    Ingredients

YOU WILL NEED:

For the dough:
1 1/4 cup flour
3 tbsp canola oil
pinch salt
1/3 cup + 1 tbsp warm water

For the filling:
2 pound apples about 6 Granny Smith apples
1/4 cup sugar
2 tsp cinnamon
1 tbsp lemon juice
1/3 cup raisins soaked overnight in rum
1 tbsp rum

To assemble:
1/4 cup panko bread crumbs
1/4 cup almond flour
6 tbsp melted butter

LET'S START:

  • applestrudel

Prepare:
Lined a baking sheet with parchment paper.
If you didn't soak the raisins in rum over night, now is the time to do so.
Put them into a small bowl, add rum and let them soak till you use them.

Place flour, oil, pinch of salt in a medium bowl.
Add warm water little by little using hands to mix it.

Take out from the bowl to flat surface knead it with your hand for 10 minutes.
It will be smooth and silky dough.
Cover the dough with warm bowl and let it rest for 30 minutes in warm draft free area.

Meanwhile prepare the filling.

SECOND:

Prepare the filling.
Making lemon juice.
Peel, quarter, and core the apples.
Slice the quarters to 1/4 inch then cut in half crosswise.
Combine apple, sugar cinnamon, soaked raisins with rum, lemon juice in a large bowl.
Set aside.

THIRD:

Roll it and stretch it.
On a large working surface put a clean kitchen towel and flour it.
Put dough onto this floured clean kitchen towel.
Use a rolling pin to make it to a thin rectangle shape.

Now the fun part starts. You will stretch the dough.
Use the back of your hand to stretch the dough.
Make it 'see-through' thin, so you can see the towel underneath it.
Be sure to pull the edges as well.
You should end up with a rectangle around 16”x 20".

BAKE IT:

Assemble it.
Brush half of the melted butter all over the dough.
Sprinkle panko and almond flour onto the dough leaving the edges empty - about 1.5 inches.
Spread apples and raisins the same way over the dough. Do not use the juice. You can add this juice when making apple sauce. Recipe here

FIFTH:

Roll it.
Fold the long sides up.
Lift the short side of the dough by lifting the towel.
Roll the whole cake gently.
The result it like a roll cake.
Carefully transfer the strudel to the prepared baking sheet. Seam side down.

Preheat oven to 400°F.

BAKE IT:

Brush and Bake it.
Brush melted butter on the strudel.
Bake it for 15 minutes.
Brush more melted butter on the strudel.
Bake 15 minutes more.
And again brush more melted butter over the strudel.
Bake for another 10 minutes.

Take it out of the oven.
Let it cool for 20 minutes.

SERVE IT.

Serve it warm.
Cut 2 inch thick pieces.
Sprinkle powder sugar on top.
Serve warm with whipped cream or custard cream or ice cream along with your favorite tea.
