Ingredients
YOU WILL NEED:
8 tbsp
butter
at a room temperature
2/3 cup
sugar
2 large
eggs
1/2 cup
milk
2 tbsp
lemon juice
2 cups
flour
1/4 tsp
baking soda
pinch of
salt
1 cup
frozen blueberries
For Icing:
1 1/2 tbsp
lemon juice
1/2 cup
confectioners sugar

LET'S START:
Prepare:
Preheat oven to 350°F.
Place milk, lemon juice in a small cup.
Let it sit until use.
It will turn into buttermilk.
Place in a medium bowl flour, baking soda, pinch of salt.
Whisk it and set aside.
SECOND:
Mix:
Place soft butter and sugar in a stand mixer bowl.
Beat it for 2-3 minutes, until creamy.
THIRD:
Add and mix:
Scape the side of the bowl.
Add eggs, one at a time.
Beat it.
Scrape the side of the bowl.
Lower the speed.
Add half of flour and half of milk.
Mix it well, then turn off mixer.
FOURTH:
Add and fold:
And remaining flour and milk.
Mix well with a spatula.
FIFTH:
Add and fold gently:
Add blueberries and just fold it gently.
Shouldn’t break the berries too much.
BAKE IT!
Pour and bake.
Pour the batter into 9x5 loaf pan lined with a parchment paper.
Bake it for 50-60 minutes
Insert a tooth pick in a middle, when comes clean it’s ready.
Take out from the oven.
Let it be in a pan for 10 minutes then remove the cake on the rack until cool.
SEVENTH:
Icing.
In a small bowl mix confectioners sugar and lemon juice until creamy.
Drizzle over the cake.
SERVE IT.
Serve it with your favorite tea at the afternoon teatime.
