Prepare. Separate 3 eggs.
You need only the egg yolks.

Add yeast, pinch of sugar, in a small bowl and add warm water. Leave it for 8 minutes.
Warm 1/4 cup of milk.
SECOND:
Mix, whisk and knead it. Place sugar, butter, salt in a medium bowl.
Add warm milk and whisk it all together.
Add egg yolks and one egg.
Mix it well.
Shift 1/3 of flour into the mixture.
Whisk it.
Add yeast and rest of the flour.
Mix it well with your hand then knead it.
It will be sticky at first. No worries it will come together.
Put the dough onto lightly floured countertop.
THIRD:
Hit it, knead it. Now you have to hit the dough 40 times onto the countertop.
Hold the dough on the corner like a tennistrack.
Hit it onto the countertop without letting it go.
Then hold it on the other corner and hit it again.
Keep changing and hitting.
Watch out for your fingers.
Then knead the dough until smooth.
Put the dough into tripled plastic bag.
Close them tight. It shouldn’t get any air in the plastic bag.
Let the dough rest in the refrigerator for 10 hours or up to 2 days.
Dough will be triple in size.
FOURTH:
Shape it. Grease loaf pans with butter and flour.
Take the dough from the refrigerator divide the dough in 9 pieces.
Using the palm of your hand make a round smooth ball.
Put the balls into the prepared pan
Cover with plastic and let rest for 45 minutes.
BAKE IT!
Bake it. Preheat the oven to 425°F.
Mix egg yolk and milk together.
Brush this egg wash on the top of the dough.
Bake brioche for 15 minutes or until golden brown.
Take it out of the oven. let rest in the pan for 15 minutes.
Then take it out off the pan and cool it on the rack.
SERVE IT.
Enjoy with coffee, tea, champagne or sauternes. Serve it when still slightly warm with butter and jam or cheese and smoked salmon.
