Ingredients
YOU WILL NEED:
5
eggs
separated
1/2 cup
confectioners sugar
sifted
3.5 oz
dark chocolate
70% cocoa
8 tbsp
unsalted butter
whipped cream
for serving

LET'S START:
Prepare.
Separate eggs into two medium bowls.
SECOND:
Beat it.
Add 1/4 sugar to the egg yolks.
Beat it with a hand mixer until thick and pale in color - about 2 minutes.
Set aside.
THIRD:
Melt it.
Place chocolate, butter in a small sauce pan.
Over very low heat let it just melt.
Stir slowly to combine.
FOURTH:
Add and fold.
Add the chocolate mixture into egg yolk mixture.
Stir with spatula to fold it.
FIFTH:
Beat and combine.
Add 1/4 cup sugar to the egg white.
Beat it with a hand mixer until soft peaks form.
Add it into a chocolate mixture.
Fold it gently but throughly with spatula to combine.
SIXTH:
Pour it.
Pour the mousse into ramekins or glasses.
Put them into the refrigerator until set - about 3 hours.
SERVE IT:
Serve it.
Serve it with whipped cream on top.
Perfect dessert after dinner.
