Ingredients
YOU WILL NEED:
4 oz
dark chocolate
70% cocoa, chopped
4 tbsp
butter
3
eggs separated
1/2 tsp
vanilla extract
pinch of
salt
1/8 tsp
cream of tartar
3 tbsp
sugar
cocoa powder
and
butter
for ramekins

LET'S START:
Prepare:
Separate eggs.
Place egg yolk in a small bowl, egg white in a medium bowl.
In a double boiler add chocolate and butter.
Place over low heat until melt.
SECOND:
Add and mix:
Remove from heat.
Add 3 egg yolk, vanilla extract and salt.
Mix it with a spatula.
Set a side
THIRD:
Beat egg whites:
Add 1/8 tsp of cream of tartar into the egg whites.
Beat it with a hand mixer.
Add sugar one tbsp at a time.
Beat until soft peaks form.
FOURTH:
Add and fold:
Add beaten egg whites into a chocolate mixture, 1/3 at a time.
Gently fold it.
FIFTH:
Pour and rest.
Butter the soufflé dish and sprinkel cocoa powder around.
Pour the batter into the dish.
Cover and refrigerator until baking.
BAKE IT!
Bake it.
Preheat oven to 400°F.
Put soufflé dish into oven.
Then lower the temperature to 375°F.
Bake it for 15-20 minutes.
Depends on what kind of soufflé dish you use.
SERVE IT.
Serve it right away for teatime or after dinner as a dessert.
