4 cups zucchini shredded - about 1 large zucchini
1 tsp salt
2 eggs
2/3 cup flour
1/2 cup parmesan cheesegraded
1/3 cup chiveschopped
1/8 tsp cayenne pepper

LET'S START:
Shred it. Shred zucchini using food processor.
Place shredded zucchini into colander.
Sprinkle salt over it and let sit for 30 minutes over a bowl.
SECOND:
Combine. Place eggs, flour, parmesan cheese, chives, cayenne pepper in a large bowl.
Combine well.
Take a hand full shredded zucchini and squeeze more water out with your hand.
Put it one by one into the egg mixture.
Mix all together.
FRY THEM
Fry them: Heat up canola oil in a none stick frying pan.
Scoop out zucchini mixture one table spoon at a time and fry them for 3 minutes each side or until lightly browned.
