    Ingredients

YOU WILL NEED:

For the filling:
1 cup almond flour
1/2 cup sugar
pinch salt
6 Tbsp unsalted butter cubed, at room temperature
1 large egg
1/8 tsp almond extract

For the cake:
2 sheets puff pastry
1 whole almond It's the fève
Egg wash: 1 egg yolk and 1 tsp milk

For serving:
1 paper crown

LET'S START:

  • blinis

Prepare the filling:
Combine all of the filling ingredients in the bowl of a food processor.
Blend until smooth, creamy paste.
Transfer to a small bowl.
Then cover and refrigerate for at least 1 hour.

SECOND:

Prepare the cake:
Line a baking sheet with parchment paper.
On a floured surface roll out one sheets of puff pastry so you can cut out a 10-inch circle.
Place the it on the prepared baking sheet and cover it with another parchment paper.
Now repeat with the second puff pastry sheet.
Refrigerate the dough for thirty minutes.

THIRD:

Assemble the cake:
Preheat the oven to 375ºF.

Take out the almond cream and dough from the refrigerator.
Remove the top layer of pastry and parchment paper.

Spread an even layer of the almond cream on the bottom disk leaving 1 inch border around the edges.

Place one whole almond to act as the fève (prize) somewhere in the almond paste.

Brush water on the 1 inch exposed puff pastry then place second disk onto of the first.

Press both tight together by using a fork. Make sure it is completely sealed all around.

BAKE IT:

Decorate and bake it:
Beat the egg yolk and milk and brush it evenly over the top. Avoid getting the glaze on the sides of the pastry. If so the pastry does not rise at the edges.

With a sharp knife create a decorative pattern on the top without cutting through the pastry completely.

Then use a sharp pointy knife to poke five holes in the top. This will allow the to steam escape while baking.

Back for 30 minutes or until golden brown.

SERVE IT.

Enjoy it.
Remove from oven and let rest on a cooling rack.
Serve warm or at room temperature.

Place the paper crown on top of the Galette des Rois.

The person who has the whole almond in its piece is the king for the day and can wear the crown.
