Prepare. Separate 2 eggs.
Add 2 egg, 2 egg yolk and sugar to a double boiler.
Heat up the double boiler over medium heat.
Whisk until it starts to thicken.
Turn off the heat.
SECOND:
Add milk. Add the milk.
THIRD:
Shift and whisk. Sift flour, baking powder into the egg mixture.
Whisk it all together.
FORTH:
Beat and fold it. In a separate bowl add the 2 white eggs and pinch of sugar.
Beat it using hand mixer until stiff peaks.
Add beaten egg whites to flour mixture.
Just fold it in lightly.
FRY IT!
Fry it. Heat a frying pan over low-medium heat.
Grease with a bit of butter.
Add half cup of batter to the frying pan.
Fry it until it bobbles.
Then turn it upside down.
Fry it for a few minutes until cook through.
Repeat until everything is done.
SERVE IT.
Enjoy them in the morning. Serve Japanese Hot Cake with butter and maple syrup for Sunday breakfast or brunch.
