Prepare. Put raisins in a small bowl and add rum to soak them.
Cover and let raisins soak for 30 minutes.
SECOND:
Combine it. Separate eggs.
In a large bowl combine egg yolks, sugar, salt beat them using hand mixer until pale yellow.
Add milk and vanilla extract. Beat it.
Add half of the flour. Beat it.
Add another half of the flour. Beat it until smooth batter.
Drain raisins and add them.
THIRD:
Fold it. In a medium bowl beat egg white until stiff and creamy.
Gently fold stiff egg white into batter.
Batter will be liquid/runny.
FRY IT!
Fry it. 1. Heat up a 10.5 inch pan and add 2 tbsp butter.
Let butter melt and start to foam.
Turn to medium heat.
2. Pour half of batter into the pan.
Cook for about 4 minutes or until brown on the bottom.
3. Flip it carefully. Don't worry if it is a bit messy. Cook about 4 minutes.
4. Use two spatulas to tear it into bite-sized pieces.
Set them aside on a plate.
5. Repeat the same for the other half.
6. Combine both batches in pan to heat for two more minutes.
