Ingredients
YOU WILL NEED:

fresh egg
preferably from own chicken
1 tsp
dijon mustard
pinch
salt
+ more to taste
2 tsp
sherry vinegar
1/2 cup
canola oil or olive oil
2 tsp
lemon juice
+ more to taste

LET'S START:
Prepare:
Get a super fresh egg out of the nesting box.
SECOND:
Separate.
Separate egg.
Egg has to be at room temperature.
You only need the yolk.
THIRD:
Whisk it.
In a medium bowl add egg yolk, dijon mustard, pinch of salt.
Whisk it until thick and pale in color.
FOURTH:
Add and whisk it.
Add vinegar.
Continue to whisk it.
FIFTH:
Add oil.
Add oil little bit at the time.
Whisk it constantly and keep adding oil little by little.
Continue to whisk until texture of custard cream.
SIXTH:
Add more taste.
Add lemon juice and more salt to taste.
ENJOY IT.
Enjoy it.
Ready to use for potato salad or any kind of salad dressing.
You can keep it in the refrigerator for up to three days.
