1 1/2 cup any berriesfresh or frozen
3/4 cup sugar
8 tbsp unsalted butterat room temperature + for grease the pan
3 eggs
1/2 tsp salt
1/2 tsp vanilla extract
2 1/4 cup flour
2 tsp baking powder
4 tbsp milk
Prepare. Grease the mini muffin pan with butter and flour.
Preheat oven to 350°F.
SECOND:
Beat it. Place butter and sugar in a medium bowl.
Beat it with a hand mixer until creamy, for 3-4 minutes.
THIRD:
Add and mix. Add eggs and salt vanilla extract.
Continue beating it for 30 second.
FOURTH:
Add and mix. Add flour, baking powder and milk.
Mix it with low speed
FIFTH:
Add and fold. Add berries.
Gently fold it with a spatula.
BAKE THEM.
Fill and bake them. Fill the batter into the mini muffin pan, 2/3 full.
Makes 24 mini muffins.
Bake them for 15 minutes.
Remove from the oven and let them rest for 5 minutes.
SERVE THEM:
Serve them. Serve them warm for breakfast or your afternoon teatime.
