Ingredients
YOU WILL NEED:
1
Maisonté Puff Pastry
or store bought puff pastry
1/2 pound
mushroom
2 tbsp
scallions chopped
2 tbsp
butter
1 tsp
thyme
1 tsp
dill
2 tsp
parsley
salt, pepper
2 1/2 oz
goat cheese
1
egg
for egg wash

LET'S START:
Make duxelles:
Wash the Mushrooms.
Mince them.
SECOND:
Sauté:
Put 2 tbsp butter into a cast iron pan.
Sauté chopped scallions for a minute.
Add mushrooms and keep sautéing until no longer juice is visible.
Mushrooms are going to separate from each other. It looks like caviar.
Add thyme, dill, parsley and goat cheese.
Mix it well.
Add salt and pepper.
Set aside.
THIRD:
Preheat and cut:
Preheat oven 350°F.
Take puff pastry out from refrigerator.
Cut it into 2” squares.
FOURTH:
Fill and fold:
Put duxelles in a middle of each square.
Fold diagonally both corners.
Press corners tight together.
Transfer to parchment paper lined baking sheet.
BAKE THEM!
Brush and bake.
Beat one egg.
This is egg wash.
Brush the mushroom puffs with egg wash.
Bake them for 15-20 minutes or until golden.
Serve them warm.
SERVE THEM.
Perfect for an appetizer with glass of champagne.
