For Crust:
1 1/4 cup flour
pinch of salt
8 tbsp butter
1/4 cup iced water
For the Filling:
2 tbsp butter
2 large yellow onionthinly sliced
4 oz goat cheese
1 tbsp fresh thyme
2 large eggs
1 cup heavy cream salt pepper

LET'S START:
Make the dough. Mix together flour, sugar, butter, salt for a few second using food processor. Add iced water and blend until dough is coming together. Wrap the dough into plastic wrap. Cool it for 2 hours or more.
Meanwhile prepare the filling.
SECOND:
Make the filling: Place butter in the cast iron pan over medium heat; when melted, add thinly sliced onions.
Cook until golden and very soft.
Let it cool.
Add thyme and goat cheese.
Stir it and set aside.
THIRD:
Whisk it: Place eggs and heavy cream in a bowl.
Whisk it.
Add salt and pepper.
Set aside.
FOURTH:
Bake the crust: Take out the dough from the refrigerator and let sit for 10 minutes.
Grease and flour a 10" tart pan.
Roll the dough into round disk.
Place the dough onto the prepared tart pan.
With a fork make some small holes on the bottom of the shell.
Bake it for 15 minutes.
BAKE IT!
Fill and bake: Spread the onion, cheese mixture into the baked crust.
Pour the egg mixture over it.
Bake it for 25- 30 minutes or until golden.
SERVE IT.
Serve it. Perfect for lunch or as an appetizer.
