For Tart Shell:
1 cup flour
6 tbsp unsalted buttercut into 6 pieces
1 tsp sugar
Pinch salt
3 tbsp iced water
For Tart Filling:
3 tbsp sour cream
4 oz cream cheeseroom temperature
4 tbsp sugar
3 tbsp lemon juice
3 eggs
3 tbsp heavy cream
For Tart Topping:
2 cup raspberries

LET'S START:
Make the tart dough.Mix together flour, sugar, butter, salt for a few second using food processor. Add iced water and blend until dough is coming together. Wrap the dough into plastic wrap. Cool it for 2 hours or more.
SECOND:
Make the shell: Preheat oven to 390°F.
Grease the 9" tart pan with butter and flour.
Take out the dough from the refrigerator and let sit for 10 minutes.
Roll the dough into round disk.
Place the dough onto the prepared tart pan.
Put foil onto the dough and put beans or other weight on the top.
Bake it for 30 minutes.
Meanwhile prepare tart filling.
THIRD:
Make the filling: Place sour cream, cream cheese, sugar, lemon juice, eggs, heavy cream into a medium bowl.
Blend it well until creamy using a magic stick.
FOURTH:
Pour the filling: Take the baked tart shell out of the oven.
Remove the foil and weight.
Pour the cream cheese mixture into the tart shell.
Turn the oven down to 350°F.
Bake it for another 30 minutes.
Take out from the oven and let it cool completely.
FIFTH:
Decorate it: Put raspberries on top of the tart.
SERVE IT.
Serve it. Serve the Raspberry Cheese Tart with your afternoon tea or as a dessert.
