hand full fresh spinachchopped
8-10 long chiveschopped
1 tsp thymeleaves only
6 egg yolks
1 tsp dijon mustard
pinch nutmeg
1 cup heavy cream
1 cup milk
1 cup shredded gruyère cheese salt and pepper

LET'S START:
Prepare.
Separate eggs. We only need egg yolks.
Chop spinach, chives and thyme leaves.
SECOND:
Add and mix. Preheat oven to 350°F.
Place egg yolks, dijon mustard, thyme, pinch nutmeg, salt, pepper in a medium bowl whisk it.
Add heavy cream, milk, shredded cheese mix it well.
THIRD:
Add and stir. Add chopped spinach and chives.
Stir it.
BAKE THEM.
Fill and bake. Put ramekins into a deep baking sheet.
Spoon the spinach custard mixture into ramekins.
Add warm water into the baking sheet.
Bake them for 20-25 minutes or until custard is set.
SERVE THEM.
Serve them. Remove from the oven and let rest in a water for 20 minutes.
Perfect for appetizer with a glass of wine.
Serve them warm.
You can make these in advance and reheat them.
