Ingredients
YOU WILL NEED:
3-4
Japanese sweet potatoes
or other sweet potatoes
1
puff pastry

or other
1
egg
2 tbsp
sour cream
4 oz
goat cheese
1 tbsp
olive oil
1
garlic clove
crushed
1 tbsp
parsley
chopped
2 tsp
sunflower seeds
black pepper
salt

LET'S START:
Prepare:
Steam the whole sweet potatoes with skin on until soft.
Let them cool.
Cut them into 1/4 inch thick slices.
SECOND:
Roll and brush:
Preheat oven to 400°F.
Take the puff pastry out of the refrigerator.
Roll it out a little.
Place it onto a baking sheet lined with a parchment paper.
Brush egg wash all over the puff pastry
Then brush sour cream on it.
THIRD:
Add and add more:
Place the slices of potatoes on the puff pastry.
Let them overlap.
Sprinkle goat cheese and sunflower seeds over it.
Add salt and pepper.
BAKE IT.
Bake it:
Bake it for 20-25 minutes.
Meanwhile mix olive oil, the crushed garlic and a pinch of salt.
SERVE IT.
Serve it:
Take it out from the oven.
Brush the prepared garlic oil on top of the galette.
Sprinkle parsley on top.
Cut it in small pieces.
Serve it warm or at room temperature for lunch or as an appetizer.
