Cheesecloth
2 cups milk
1/4 cup heavy cream
1/8 tsp salt
1 1/2 tbsp vinegar

LET'S START:
Prepare: Line a strainer with cheese cloth and put over a bowl.
SECOND:
Combine & boil: Put the milk, heavy cream and salt into a saucepan.
Bring to a boil over the medium heat.
Stir often preventing from burning on the bottom.
Remove from heat and add vinegar.
THIRD:
Let rest: Let it rest for 30 minutes.
The milk will curdle.
FOURTH:
Strain: Pour it into the prepared strainer.
Let it rest for 30-45 minutes.
After that your ricotta is ready.
FIFTH:
More than cheese: There will be yellow water in the bowl.
This is whey and very healthy.
Use it for smoothies or to make some super fluffy pan cakes.
